The biggest change since eating primal is that I put more effort and preparation into my lunches. No more dull sandwiches, but colorfull and tasty salads (most of the time). Good thing about these are that I can make three simultaneously and store them in the refrigerator (I love my little plastic containers ). So now I don’t have to think in the morning what to bring for luch, just grab a little container, sprinkle some vinagre and olive oil on the salad, and presto: an easy paleo lunch on the go
My favorite so far is a simple salad with bits of smoked chicken thigh, some cherry tomatoes and cucumber. When I think of it I pimp it with some roasted pine nuts or almonds and a dash of chia seeds.
