Crock-Pot Paleo Chicken Teriyaki

The best dish out of the Crock-Pot so far!! So good to come home after work to find the chicken warm, ready to eat and finger licking good! The meat just fell of the bone. Nice thing about this dish is that you can get the chicken out of the freezer the night before, whisk together the marinade, and let the chicken defrost over night, in the crock-pot, already covered with the marinade! The original recipe calls for sugar, but orange juice and zest was a very effective substitute in this case.

Crock-Pot Paleo Chicken Teriyaki

  • about 1 kg of organic drumsticks
  • ¾ cup Coconut Aminos
  • ¼ cup apple cider vinegar
  • zest from ⅓ orange
  • orange juice from ½ orange
  • 1 tbsp grated ginger
  • 2 cloves of garlic, minced
  • good amount of fresh pepper and seasalt
  • 3 tbsp arrowroot powder
  1. whisk together all the ingredients for the marinade (all except the chicken)
  2. let the chicken marinade over night
  3. put chicken with marinade in the crock-pot
  4. Cover and cook on low for 4 to 5 hours or until chicken is tender.
  5. Remove chicken from the slow cooker.
  6. Skim fat from cooking liquid.
  7. Place liquid in a saucepan and bring to a boil.
  8. Combine arrowroot powder with water until smooth, then gradually stir into liquid and stir until sauce is thickened.
