Soup from the Crock-Pot

This week I used my crock-pot for the first time to make some nice soup from pumpkin and parsnip (totally in season). It turned out even better than I could have imagined! The slow cooking definitely adds more depth to the dish!

I garnished the soup with some air-dried lamb ham from my favorite organic farm shop

I got the recipe from this nice little Dutch book, although it’s not specific paleo most dishes are suited to paleo-fy and I will absolutely try more of them :-)

Crock-Pot Pumpkin Parsnip Soup

Ingredients
  • 1 large pumpkin, peeled, diced and seeds removed
  • 2 parsnips, cleaned and diced
  • 2 tbsp coconut oil
  • 1 large union, sliced
  • 1 clove of garlic, minced
  • 1 tbsp ginger, minced
  • ½ tsp ground cumin
  • ½ tsp ground dried cilantro seeds (ketoembar)
  • ½ tsp garam masala
  • 9 dl vegetable stock
  • salt and freshly ground pepper
  • optional: dried ham and chives to garnish
Instructions
  1. Place the pumpkin and the parsnip in the crock-pot
  2. Heat coconut oil in large saucepan and add union, garlic, ginger and spices
  3. Mix everything together and let it simmer for about 10 minutes with the lid on, steering occasionally (make sure not to burn the spices, keep the heat medium)
  4. Add stock and bring to a boil
  5. Pour stock with spices in the crock-pot and season with salt and pepper
  6. Set timer to 6-8 hours on low (or 3-4 hours on high)
  7. When soup is done, blend for a smooth soup
  8. Garnish with ham and chives

    Hoi, als je ee rode pumpkin gebruik hoef je hem niet te schillen heeft een bilogische boer mij verteld. Alleen even schoonboenen de zaadjes ruw weg uitsnijden en in stukken znijden. Het pureert zeer makkelijk wanneer het gaar is. Ik doe het al jaren zo, nadat ik het advies had gekregen. Laatst werd het weer eens herhaald in Ekoplaza (Natuurwinkel)

      Bedankt voor de tip! Er zit weer een nieuwe batch in de crock-pot, dit keer mét schil, heel benieuwd hoe dat smaakt :-)
